Granola is to foodies what vanilla crescents are to grandmas – a true classic. Not to mention an easy win. Here, minimum difficulty meets maximum pleasure. Preheat the oven to 180 °C (top and bottom heat). Line a baking tray with baking paper.
Mix the rolled oats, almonds, buckwheat, coconut flakes, cinnamon, chai spice and salt in a bowl. Finely grate the lemon zest and add to the mix.
Stir first the melted coconut oil, then the honey (or maple syrup for the vegan version) into the oat mixture.
Fold in thoroughly until the oat mixture is evenly moist throughout. You will probably think that the mixture is too dry at first. That is because the oats are a little shy and hesitant to mix with the honey. But once the flakes give in to the sweet embrace, the two become inseparable. So don’t give up and keep mixing: eventually, the oats will soften and love will win. That’s a promise.
Spread the mixture evenly across the baking paper and put into the oven for approx. 10 minutes. Then flip the mixture and continue to bake for another 10-15 minutes. Keep a watchful eye on the granola until the end. The last few minutes are when it can quickly turn too brown and burn.
Important: Upon opening the oven, briefly close your eyes and inhale deeply. The freshly baked romantic pair of oats and honey will now fill your nose, your heart and the entire apartment with their sweet aroma. Mmm.
Once you have reached the desired degree of brownness, remove from the oven and allow to cool at room temperature. Only then will the granola get really crunchy.
Fill into tightly sealable containers to make the perfect gift for yourself or others. The granola tastes best within the first two weeks after baking.
